Vegan Pumpkin Pie with a Spiced Oat Crust

This Thanksgiving, delight your family and friends with a plant-based take on the classic pumpkin pie. This dessert is rich, creamy, and full of warm spices, making it the perfect addition to your holiday table. Ingredients

For the crust:

– 1 ½ cups rolled oats

– ½ cup almond flour

– 3 tbsp coconut oil (melted)

– 3 tbsp maple syrup

– 1 tbsp water

– ½ tsp cinnamon

– Pinch of salt

For the filling:

– 1 ½ cups canned pumpkin puree

– 1 cup full-fat coconut milk

– ½ cup brown sugar

– 2 tbsp cornstarch

– 1 tbsp maple syrup

– 1 tsp vanilla extract

– 1 tsp cinnamon

– ½ tsp nutmeg

– ¼ tsp ground ginger

– ¼ tsp ground cloves

– Pinch of salt

Instructions:

1. Prepare the crust.

– Preheat your oven to 350°F (175°C).

– In a food processor, pulse the oats until they resemble coarse flour.

– Add almond flour, melted coconut oil, maple syrup, cinnamon, salt, and water. Pulse until the mixture sticks together when pressed.

– Press the mixture evenly into the bottom and up the sides of a 9-inch pie dish. Use the back of a spoon or your fingers to smooth it out.

– Bake for 10 minutes, then remove from the oven and set aside to cool slightly.

2. Make the filling:

– In a large mixing bowl, whisk together the pumpkin puree, coconut milk, brown sugar, cornstarch, maple syrup, vanilla, cinnamon, nutmeg, ginger, cloves, and salt until smooth.

3. Assemble the pie:

– Pour the filling into the pre-baked crust, smoothing the top with a spatula.

– Bake for 50-55 minutes, or until the filling is set but still slightly jiggly in the center.

4. Cool and serve:

– Let the pie cool at room temperature for at least 2 hours, then refrigerate for another 2 hours to fully set.

– Serve chilled or at room temperature with a dollop of coconut whipped cream, if desired.
