Mariola Alsina: Thai Style Banana & Coco Dessert

Mariola Alsina was born in Barcelona and lives between Rousillon (France) and Alt Empordà (Catalonia, Spain). She has a master’s degree in strategic PR and a lot of experience in the hospitality and food sector. She is very interested in spreading vegan food and cruelty-free culture. Mariola is now involved in the Vegan Academy Meeting Point project, that is focused on offering an international and beautiful place where all vegan chefs, professionals and vegan lovers can meet and combine knowledge and experience.

Mariola loves to travel and cook creatively. She is now developing a beautiful collection of vegan recipes for the Academy. The photo of the recipe was taken at Coco’s restaurant in Cadaqués. The recipe is a traditional Thai dish.

Thai Style Banana & Coco Dessert



3 bananas. 

1 can of coconut milk. ( 400ml )



Sugar. ( 2 teaspoons ) 


Put half the can of coconut milk on the fire in a saucepan. Cut the bananas into slices, and place them one by one in the pan with the coconut milk. Once all the bananas are in the pan, with the coconut milk, finish covering with the rest of the coconut milk. Wait 5m, while it is being stirred. Add the sugar, cinnamon and vanilla. Leave over low heat until the bananas are cooked.

Serve with a decoration of coconut slices.
