Berry Medley Salad

For many parts of the world, the next few weeks mean an abundance of fresh berries from the garden. 

This refreshing salad is a great way to combine extra fruit and veggies into a delicious side dish and even has a nourishing mint dressing for the perfect finish.

Take this salad to your next outdoor picnic and celebrate the abundance of summer.

Dressing:

  • ½ cup mint leaves
  • ½ cup olive oil
  • ½ cup lemon juice
  • 4 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Salad Ingredients:

  • 1 cup strawberries
  • 1 cup blueberries
  • 1 cup blackberries
  • 8 cups of your favorite lettuce or mixed greens
  • 1 avocado (diced)
  • ½ cup sliced almonds

1. Wash Produce: Wash all produce and set the berries aside dry while you chop the rest of your salad ingredients. 

2. Chop: greens into bite sized pieces and slice up any extra veggies you enjoy on your salad

3. Add berries and nuts: Gently mix in the berries, nuts, and avocado pieces.

– Take this salad to the next level by sprinkling with hemp heart seeds

– Amp up the texture and nutrition by stirring in 1 cup of cooked wheat berries.
