– 1 can (15 oz) chickpeas, drained and rinsed

– 1 onion, chopped

– 2 cloves garlic, minced

– 1 teaspoon smoked paprika

– 1 teaspoon cumin

– ½ teaspoon chili powder

– 1 can (14 oz) diced tomatoes

– 1 ½ cups vegetable broth

– 2 handfuls spinach

– Salt & pepper to taste

– Olive oil

Instructions:

1. Heat olive oil in a pot and sauté onion and garlic until fragrant.

2. Add sweet potato, chickpeas, smoked paprika, cumin, and chili powder. Stir well.

3. Pour in diced tomatoes and vegetable broth. Simmer for 20 minutes until sweet potatoes are tender.

4. Stir in spinach and cook for another 2 minutes.
