Vegan Peanut Butter & Chocolate Chip Cookies
End Veganuary on a sweet note with these chewy, delicious, and protein-packed cookies that are 100% plant-based.
Ingredients:
– 1 cup natural peanut butter
– ¾ cup coconut sugar or brown sugar
– ¼ cup unsweetened applesauce
– 1 teaspoon vanilla extract
– 1 teaspoon baking soda
– 1 ½ cups oat flour
– ½ teaspoon salt
– ½ cup dairy-free chocolate chips
Instructions:
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a bowl, mix peanut butter, coconut sugar, applesauce, and vanilla.
3. Add baking soda, oat flour, and salt. Stir until combined.
4. Fold in chocolate chips.
5. Scoop dough onto the baking sheet and flatten slightly.
6. Bake for 10-12 minutes until golden brown. Let cool before serving.
